How about trying some Hyderabadi chicken Biryani :
Recipe:
1. RICE
- take 1 and 1/2 cup of good quality basmati rice
- soak in water for 30 mins
2. BOIL THE RICE
Take a fine cloth and put the following
- 3 Black Cardamom
- 6 Green Cardamom
- 6 Clove
- 6 Black Pepper
- 2 Bayleaf
- 1 inch cinamom
- 1 teas spoon shahi jeera (caraway seeds)
- salt to taste
Tie the cloth and put this bag in boiling water. Let the flavours mix with the water.
Now put the rice and cook it till it is half cooked.
3. CHICKEN PREPARATION
Take around 800gms of chicken and marinate it using the following
- 2 spoons Ginger Garlic Paste
- 1 tb Red Chillie Powder
- 1 tb Garam Masala Powder
- Salt to taste
- Yogurt - 1 Cup
- Green Cardamom Powder 1 tb
- Brown Onions 1 Cup
- Ghee/Oil 4 Tb
- Chopped coriander
- Min Leaves 10-12
- 2 Green Chillies (broken)
- 1 spoon turmeric powder
- Lime Juice - 1
Mix the whole thing and keep it for 30 mins.
4. LAYERING
Layer 1
Now put half of the semi cooked rice on top of the above marinate.Make sure the whole marinate gets covered.Its ok to keep little water from the rice.
Now add the following on top of the rice
- Chopped coriander
- Mint Leaves 8-10
- Some Brown Onions
- Little Garam Masala 1/4 spoons
- Green Cardamom Powder -1 spoon
Layer2
Now put the remaining rice in a similar way and sprinkle the following again
- Brown onions
- Garam Masala
- Cardamom Powder
- saffron soaked in milk
- ghee/oil 4-5 spoons.
5. SEALING
Now cover the vessel and seal it from the sides. Cook it for 20-25 mins in medium flame.
Your biryani should be ready...
